I am sure most of you with Easter weekend just come and gone have a pile of leftovers sitting in your fridge...with a family that is most likely already tired of eating Hot Turkey Sandwiches or just plain leftover turkey. I have just the thing to change all of that and help you use up even more of your leftover food items.
Hot Turkey Pockets Dipped In Gravy... Turkey Shredded Mashed Potatoes Leftover Veggies Leftover Stuffing Batch of Rough Puff Pastry 1 Egg Whisked Slightly Heat your oven to 350ยบ
Roll out your pastry dough, cut it into 2x3 inch rectangles and top one half of each rectangle with your leftovers. I found that putting the potatoes on the bottom allowed me to squish the rest of the ingredients on top so that they stuck there upon rolling.
Once you have them all topped to your liking...it is time to roll the empty side up over the full side and seal all that food into a tiny little pocket. Place them all on to a parchment lined baking sheet and brush the tops of each pocket with a light covering of egg. Now is the time to place them in your oven and bake for 15-20 minutes or just until you see the pastry dough turning a sweet golden brown colour.
While they are baking in the oven, it is a great time to heat up your gravy for dipping. Remove your pockets from the oven and plate with a side dish of gravy and...
