One of my favorite go to blogs for great recipes is Our Best Bites. Those girls always have something tasty up their sleeve and they make it so easy to follow along. The latest mouth watering adventure we went on was with their Orange Ginger Beef but after having this I am sure that this same recipe can be used with chicken breast and taste just as amazing...maybe even better. Making a mental note to give that a try :D For today's recipe you will need to grab the following items... 3 Teaspoons Grated Orange Zest 1/2 Cup Fresh Orange Juice 1/4 Cup Brown Sugar 2 Tablespoons Rice Vinegar 2 Tablespoons Soy Sauce 2 Teaspoons Sweet Red Pepper Chili Sauce 2 Teaspoons Grate Fresh Ginger 2 Teaspoons Cornstarch EVOO 1.5 Pounds of Steak Sliced Thinly Lightly Sprinkled with Salt and Pepper Mushrooms Sliced 4 Green Onions Chopped 1 Pot of Rice In a bowl combine with a fork or whisk your orange zest and juice, brown sugar, vinegar, soy sauce, sweet chili sauce, ginger and cornstarch...leave to marinate while you prep your steak and cook your mushrooms.
In a small frying pan heat some EVOO and add to that your pile of sliced mushrooms...browning them through.
While your mushrooms are browning heat up a larger frying pan to medium heat, coat it in EVOO and to that add in half of your beef, making sure to break up any pieces that are sticking together. Cook them for one minute without stirring. At this point stir your beef and cook for roughly another 2 minutes or until browned before transferring them to a bowl and repeating with your remaining beef.
Re-whisk your sauce and place it in your currently empty frying pan over medium heat to cook until thickened. Once your sauce it thick enough add in your mushrooms and your beef, along with its juices and toss to combine.
Serve your dish over hot rice and top with a handful of green onions.
Simple, quick and delicious...cannot beat that!
