When I cook a dinner time meal I try my best to create something that I can easily use the leftovers of in the next meal or two. The trick is to make sure that that I cook enough for one meal so that the BoyBears are not dipping into the next days meal. If you cook like this but are having trouble keeping BearPaws out of your extras, try cooking the extras in a separate dish or after cooking it all and BEFORE calling everyone to the table remove your extra portions. Out of sight, out of mind usually works best around here. One of my favorite Roll Over Dinnertime Meals is "Chicken Rice Casserole" Not only is it easy but it means that we are eating 2 extremely healthy meals in one week with very little effort. Can't get much better than that. I am sure you want to know how to create this delicious meal so let's get started...
You will need the following ingredients to get started...
Chicken Breast (The amount is dependent on how much you have leftover...this time around I used 4)
Rice (I used roughly 4 Cups this time around)
Cream of Chicken Soup
1 Cup Milk
1 Medium Onion Diced
1 Green Pepper Chopped
Mushrooms (I used 6 this time around)
Butter
Salt and Pepper (to taste)
Grate Cheese (I used up my Marble Cheese but Cheddar works just fine too)
In case you have not already cooked your chicken I thought I would share with you how I go about cooking mine. After placing them in a heat proof dish I coat them in EVOO and a healthy sprinkle of course sea salt and cracked black pepper...then in to an oven set for 350° until cooked through. The cooking time varies upon the thickness of your breast meat...If your cuts are very thick; to help maintain their juiciness, before covering them in EVOO it helps to butterfly the meat, lay it out flat and then follow the steps above.
For arguments sake let's assume you have leftover chicken and rice ready to go...Begin by heating your oven to a toasty warm 350°. While it is warming up, begin washing and chopping your vegetables and begin browning them in a pan with some butter.
With your vegetables browning, place your rice into a heat proof 9x13 dish ...the dish size can vary according to the amount of food you will be working with...9x13 is about average around here with 2 BoyBears at the table every night.
To the rice add in 1 Cup of milk, your can of soup, diced chicken and mix well.
Once your vegetables are nice and caramelized you can toss them into your chicken and rice mix, spreading them evenly throughout and laying the whole mix flat.
Now is the time for a grated cheese topping...but if you are anything like me you will mix some grated cheese right in with your casserole and then sprinkle a bit on top as well...DELICIOUS!
Bake the whole thing in the oven for 30-40 minutes and ....
ENJOY!!!
